These crunchy homemade spicy nuts are the perfect party snack—savory, slightly sweet, and with an addictive spicy kick. Made with simple pantry ingredients and a foolproof roasting method, they’re way better than anything store-bought.

  • 3 cups (400g) raw mixed nuts (almonds, cashews, pecans, walnuts)
  • 1 large egg white
  • 2 tablespoons (30ml) honey
  • 1 tablespoon (14g) unsalted butter, melted
  • 1/2 to 1 teaspoon cayenne pepper
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1 tablespoon brown sugar (optional)

Instructions

  1. Preheat oven to 300°F (150°C). Line a large baking sheet with parchment paper or a silicone mat.
  2. In a large mixing bowl, whisk the egg white vigorously for 30-60 seconds until frothy and slightly white.
  3. In a small bowl, combine cayenne pepper, smoked paprika, garlic powder, and kosher salt.
  4. Add honey and melted butter to the frothy egg white; whisk gently until just combined.
  5. Add raw mixed nuts to the bowl and toss with a spatula to coat evenly.
  6. Sprinkle the spice blend over the coated nuts and toss again until evenly distributed.
  7. Spread the nuts in a single layer on the prepared baking sheet.
  8. Bake at 300°F for 20 minutes.
  9. Remove from oven, stir the nuts, and spread back into a single layer. Increase oven temperature to 350°F (175°C).
  10. Return to oven and bake for another 10-12 minutes, watching closely to prevent burning.
  11. Remove from oven and let cool completely on the baking sheet (about 30-45 minutes). Do not stir.
  12. Once cool, break apart any clusters and serve or store in an airtight container.

Notes

For best crunch, do not skip the egg white wash. Let nuts cool completely on the baking sheet before serving. Store in an airtight container at room temperature for up to 2 weeks. For vegan version, use aquafaba instead of egg white, maple syrup instead of honey, and coconut oil instead of butter.
