  • 8 slices sourdough bread (or sturdy bread like ciabatta or country loaf)
  • 8 oz (225g) brie cheese, sliced into thin pieces
  • 1 cup (240g) leftover turkey, shredded or sliced
  • ½ cup (120g) cranberry sauce
  • 2 tablespoons (30g) unsalted butter, softened
  • 2 tablespoons (30g) mayonnaise (optional, but recommended)
  • Fresh arugula or spinach (optional)
  • Salt and black pepper, to taste

Instructions

  1. Prep your ingredients. Take the brie out of the fridge about 15 minutes before you start so it softens slightly. Slice it into thin pieces (about ¼ inch thick). Shred or slice your leftover turkey. If using fresh turkey, make sure it’s cooked and cooled.
  2. Butter the bread. Lay out your 8 slices of sourdough. Spread a thin layer of softened butter on one side of each slice. This will be the outside of the sandwich that hits the pan.
  3. Spread the mayo (optional). On the other side of each slice (the inside), spread a thin layer of mayonnaise. This adds flavor and creates a barrier that keeps the bread from getting soggy from the cranberry sauce.
  4. Assemble the sandwiches. On 4 of the bread slices (mayo-side up), layer the ingredients: start with a few slices of brie, then a generous amount of turkey, followed by a dollop of cranberry sauce (about 2 tablespoons per sandwich). Top with a handful of arugula if you’re using it, then finish with another slice of brie. Place the remaining bread slices on top, buttered side up.
  5. Heat the pan. Place your skillet over medium heat. Let it warm up for about 2 minutes. You want it hot but not smoking.
  6. Cook the sandwiches. Carefully place two sandwiches in the skillet (or however many fit without crowding). Cook for 3-4 minutes on the first side, until the bread is golden brown and crispy. Use your spatula to gently press down on the sandwiches halfway through—this helps the brie melt evenly.
  7. Flip and cook the other side. Carefully flip each sandwich using your spatula. Cook for another 3-4 minutes, until the second side is golden brown and the cheese is fully melted. If the bread is browning too quickly, reduce the heat to medium-low.
  8. Rest and serve. Remove the sandwiches from the pan and let them rest on a cutting board for about 1 minute. This helps the cheese set slightly so it doesn’t all ooze out when you cut it. Slice diagonally and serve warm.

Notes

For best results, let brie come to room temperature before slicing. Use softened butter for easy spreading. If making a batch, keep finished sandwiches warm in a 200°F oven for up to 20 minutes. To prevent sogginess, spread mayonnaise on the inside of the bread as a barrier against the cranberry sauce.
