  • 2 teaspoons baking powder

  • 1 cup (240ml) full-fat coconut milk
  • 1 large egg, room temperature
  • 2 tablespoons (28g) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • ⅓ cup (30g) shredded unsweetened coconut

Instructions

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl or liquid measuring cup, whisk together the coconut milk, egg, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir gently with a spatula until just combined. Fold in the shredded coconut. A few lumps are fine; do not overmix.
  4. Let the batter rest for 5 minutes to allow the gluten to relax and the baking powder to activate.
  5. Heat a non-stick skillet or griddle over medium heat for 2-3 minutes. Test by sprinkling a few drops of water; they should sizzle and evaporate immediately.
  6. Grease the pan with a small pat of butter or drizzle of coconut oil.
  7. Pour ¼ cup of batter onto the hot griddle for each pancake, leaving about 2 inches of space between them.
  8. Cook undisturbed for 2-3 minutes until bubbles form on the surface and the edges look set. Flip the pancake gently.
  9. Cook for another 1-2 minutes on the second side until golden brown and cooked through. The pancake should feel springy when pressed.
  10. Transfer cooked pancakes to a plate and cover loosely with foil or a clean kitchen towel to keep warm. Repeat with remaining batter, wiping the pan clean and adding fresh butter between batches.
