Instructions

  1. Preheat your oven to 325°F (160°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, whisk together the melted butter, packed brown sugar, maple syrup, vanilla extract, and fine sea salt until smooth and the sugar is mostly dissolved.
  3. In a large bowl, add the rolled oats. Pour the butter mixture over the oats and stir with a spatula until every oat is evenly coated.
  4. Spread the oat mixture onto the prepared baking sheet in an even layer. Press it down gently with the spatula to encourage cluster formation.
  5. Bake for 15 minutes, then remove the pan from the oven. Gently stir the granola, flipping the edges toward the center. Spread it back into an even layer and press down again lightly.
  6. Bake for another 10-12 minutes, until the granola is golden brown and smells toasty. The granola will still feel slightly soft when you take it out; it will crisp up as it cools.
  7. Remove the pan from the oven and immediately sprinkle the chocolate chips over the hot granola. Let them sit for 2-3 minutes to soften, then use a spatula to gently swirl them into the granola.
  8. While the granola is still warm, sprinkle generously with flaky sea salt.
  9. Let the granola cool completely on the baking sheet, about 30-40 minutes. Do not touch it while cooling.
  10. Once completely cool, break the granola into clusters of your desired size. Store in an airtight container at room temperature for up to two weeks.
