These soft peach cookies are tender, almost cake-like, with pockets of jammy peach in every bite. Quick and easy to make with fresh peaches, they’re the perfect summer dessert that comes together in about 30 minutes.

  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract (pure)
  • ยผ cup sour cream
  • 1 ยฝ cups fresh peaches, peeled and diced into small cubes (about 2 medium peaches)
  • 1 tablespoon granulated sugar (for macerating)
  • 1 teaspoon lemon juice

Instructions

  1. In a small bowl, toss the diced peaches with 1 tablespoon sugar and 1 teaspoon lemon juice. Let them sit for 10-15 minutes. After 10 minutes, drain off any excess liquid.
  2. Preheat your oven to 350ยฐF (175ยฐC). Line a baking sheet with parchment paper.
  3. In a large bowl, beat the softened butter and ยพ cup sugar together until light and fluffy, about 2-3 minutes with a hand mixer on medium speed.
  4. Add the egg and vanilla extract, then beat until combined. Add the sour cream and mix on low until just incorporated.
  5. In a separate medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  7. Gently fold the drained peaches into the dough using a spatula.
  8. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Sprinkle a tiny pinch of sugar on top of each cookie.
