A quick and easy cowboy bacon cheeseburger recipe featuring smoky bacon, juicy beef patties, and melty cheddar cheese, perfect for feeding a family of four.

Ingredients

Scale
  • 1.5 lbs (24 oz) ground beef (80/20 blend)
  • 8 slices thick-cut bacon
  • 8 slices sharp cheddar cheese
  • 4 hamburger buns
  • 1 small yellow onion, thinly sliced
  • 4 lettuce leaves (iceberg or romaine)
  • 1 large tomato, sliced
  • Pickles, thinly sliced (optional)
  • Salt (about 1 teaspoon)
  • Freshly ground black pepper (about 1/2 teaspoon)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 2 tablespoons butter
  • Mustard (optional)
  • Ketchup (optional)

Instructions

  1. In a large mixing bowl, combine ground beef with garlic powder, smoked paprika, salt, and black pepper. Mix gently with your hands, careful not to overwork, about 5 minutes.
  2. Divide the beef mixture into 4 equal portions (about 6 oz each). Shape each into a round patty slightly larger than the buns. Press a shallow dimple in the center of each patty with your thumb.
  3. Cook bacon in a cast-iron skillet or on the grill over medium heat until crispy, about 8-10 minutes. Drain on paper towels and save some bacon fat if desired.
  4. Spread butter on cut sides of hamburger buns. Toast in skillet over medium heat until golden brown and crisp, about 1-2 minutes per side. Set aside.
  5. Increase skillet heat to medium-high. Cook patties 3-4 minutes per side for medium doneness (internal temperature about 160°F). When flipping, add 2 slices of cheddar cheese on top and cover pan briefly to melt cheese, about 1 minute.
  6. Assemble burgers by layering lettuce, cheeseburger patty, 2 slices of bacon, sliced tomato, and onion on each bottom bun. Add pickles if desired. Top with the bun.
  7. Serve immediately with favorite sides and condiments like mustard or ketchup.

Notes

Do not overwork the beef mixture to keep patties tender. Create a dimple in the center of each patty to prevent puffing. Use thick-cut bacon for best texture. Toast buns to prevent sogginess. Cheese melts best when covered briefly after placing on patties. Bacon fat can be used to cook patties for extra flavor. Leftovers keep well refrigerated for up to 2 days; reheat gently to maintain texture.
