Ingredients

Scale
  • 2 ยฝ cups (312 grams) all-purpose flour
  • 1 teaspoon baking soda
  • ยฝ teaspoon salt
  • 1 cup (226 grams) unsalted butter, softened
  • ยพ cup (150 grams) granulated sugar
  • ยพ cup (165 grams) packed brown sugar
  • 2 large eggs, room temperature
  • 1 ยฝ teaspoons pure vanilla extract
  • 1 cup (120 grams) dried cranberries, soaked in warm water for 10 minutes, drained and patted dry
  • 1 ยฝ cups (255 grams) white chocolate chips

Instructions

  1. Place the dried cranberries in a small bowl and cover with warm water. Let soak for about 10 minutes to plump up. Drain and pat dry with a paper towel.
  2. Preheat the oven to 350ยฐF (175ยฐC). Line two baking sheets with parchment paper or silicone mats.
  3. In a large bowl, whisk together the all-purpose flour, baking soda, and salt until combined.
  4. In a separate bowl, cream the softened butter, granulated sugar, and brown sugar using an electric mixer on medium speed until light and fluffy, about 3 to 4 minutes.
  5. Beat in the eggs one at a time, then add the vanilla extract. Mix just until combined.
  6. Gradually add the dry ingredients to the wet mixture, folding gently with a spatula or mixing on low speed until just combined. Do not overmix.
  7. Gently fold in the drained cranberries and white chocolate chips, ensuring even distribution.
  8. Using a cookie scoop or tablespoon, drop rounded balls of dough about 2 inches apart on the prepared baking sheets.
  9. Bake for 10 to 12 minutes until edges are golden brown and centers remain slightly soft.
  10. Remove from oven and let cookies cool on the baking tray for 5 minutes before transferring to a wire rack to cool completely.

Notes

Soak dried cranberries in warm water for 10 minutes to avoid leathery texture. Avoid overmixing dough to keep cookies tender. Chill dough for 20 minutes if too soft to prevent spreading. Rotate baking sheets halfway through baking for even browning. For cakier cookies, add 1 teaspoon cornstarch to dry ingredients. For crunchier edges, flatten dough balls slightly before baking.
