  • 6 tablespoons unsalted butter
  • 1 (10-ounce) bag mini marshmallows
  • 1/4 cup molasses (not blackstrap)
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 6 cups Rice Krispies cereal
  • 1/2 cup white chocolate chips (optional)
  • 1/4 cup crystallized ginger, finely chopped (optional)
  • 1/4 cup chopped pecans or walnuts (optional)
  • Christmas sprinkles (optional)

Instructions

  1. Line a 9×13-inch baking pan with parchment paper, leaving overhang on two sides. Lightly spray with non-stick cooking spray. Set aside.
  2. In a small bowl, combine 1 teaspoon ground ginger, 1 teaspoon ground cinnamon, 1/2 teaspoon ground cloves, 1/4 teaspoon ground nutmeg, and 1/4 teaspoon salt. Stir to combine.
  3. Place 6 tablespoons unsalted butter in a large pot over medium-low heat. Melt slowly, stirring occasionally, until fully melted but not bubbling or browning.
  4. Add the spice mixture to the melted butter. Stir continuously for about 30 seconds until fragrant. Be careful not to burn the spices.
  5. Pour in the entire bag of mini marshmallows (10 ounces) and 1/4 cup molasses. Stir constantly until marshmallows are fully melted and mixture is smooth and glossy, about 3-4 minutes.
  6. Remove the pot from the heat immediately.
  7. Pour in 6 cups of Rice Krispies cereal. Fold gently with a rubber spatula until all cereal is coated and no white spots remain, about 1-2 minutes.
  8. Transfer the mixture to the prepared pan. Using a slightly wet spatula or parchment paper, gently press into an even layer. Do not press too hard. Add any optional toppings (white chocolate drizzle, sprinkles, etc.) while still warm.
  9. Allow treats to cool completely at room temperature, about 30-45 minutes.
  10. Use the parchment handles to lift the block out of the pan. Cut into squares using a sharp knife, wiping the knife clean between slices.

Notes

For extra-chewy treats, add an extra cup of marshmallows after removing from heat and stir until partially melted. Blooming the spices in the butter is essential for the best flavor. Do not refrigerate treats as they will become hard. These taste even better the next day as flavors meld.
