  • 1 cup packed light brown sugar (for caramel)
  • 1/2 cup heavy cream (or full-fat coconut cream)
  • 1 teaspoon vanilla extract (for caramel)
  • Pinch of flaky sea salt (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish with butter or non-stick spray.
  2. Make the pumpkin batter: In a large bowl, whisk together the pumpkin puree, granulated sugar, and brown sugar until smooth. Add the eggs one at a time, whisking well after each. Stir in the milk and vanilla extract until silky and uniform.
  3. Mix the dry ingredients: In a separate medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg, ginger, cloves, and salt until evenly distributed.
  4. Combine wet and dry: Gradually add the dry ingredients to the wet mixture, stirring gently with a rubber spatula until just combined. A few lumps are fine; do not overmix.
  5. Add the melted butter: Pour in the 6 tablespoons of melted butter and fold it in gently until the batter looks glossy.
  6. Pour into the prepared dish: Spread the batter evenly with a spatula. It will be thick, like cake batter.
  7. Make the caramel sauce while the cobbler bakes: In a small saucepan over medium heat, melt the 1/2 cup butter. Add the brown sugar and stir constantly until dissolved and bubbling (about 3-4 minutes). Slowly pour in the heavy cream while stirring (it will bubble up). Let simmer for 2 minutes, then remove from heat and stir in the vanilla and a pinch of sea salt.
  8. Bake the cobbler: Place the dish in the preheated oven and bake for 35-40 minutes, until the top is golden brown and slightly puffed, and a toothpick inserted into the center comes out mostly clean.
  9. Add the caramel: Remove the cobbler from the oven and let it cool for 5 minutes. Drizzle about half the caramel sauce over the top; it will sink into the warm cobbler. Reserve the rest for serving.
  10. Rest before serving: Let the cobbler sit for at least 10 minutes to set slightly before serving.
