This warm, creamy, and dangerously scoopable dip is made with rotisserie chicken, cream cheese, Caesar dressing, and Parmesan. Ready in just 15 minutes, it’s the perfect last-minute appetizer for parties or game nights.

Ingredients

Scale
  • 8 oz cream cheese, softened
  • 1/2 cup Caesar dressing
  • 1 cup cooked, shredded chicken
  • 1/2 cup shredded Parmesan cheese
  • 1/4 cup sour cream
  • 1 clove garlic, minced
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (optional)
  • For serving: Tortilla chips, pita chips, crackers, or fresh veggie sticks

Instructions

  1. Preheat your oven to 375°F (190°C). While it heats, take your cream cheese out of the fridge to soften slightly. If you’re in a hurry, microwave it for 10-15 seconds on low power.
  2. In a medium skillet over medium heat, warm the cream cheese for about 2 minutes. Stir it constantly with a spatula until it becomes soft and spreadable. This step prevents lumps later.
  3. Add the Caesar dressing and sour cream to the skillet. Stir until everything is well combined and smooth. The mixture should look glossy and slightly thick.
  4. Stir in the shredded chicken, minced garlic, and black pepper. Fold the chicken in gently so it’s evenly distributed. Let it cook for another minute, just to warm the chicken through.
  5. Sprinkle the Parmesan cheese evenly over the top. Don’t stir it in—let it sit on top so it melts into a golden, bubbly crust.
  6. Transfer the skillet to the preheated oven. Bake for 8-10 minutes, or until the dip is hot and bubbly around the edges. The cheese on top should be lightly browned.
  7. Remove from the oven and let it rest for 2 minutes. This allows the dip to set slightly so it doesn’t slide off your chips.
  8. Garnish with fresh parsley if using, and serve immediately. The dip is best enjoyed hot, straight from the skillet.

Notes

Don’t skip softening the cream cheese to avoid lumps. Use freshly shredded Parmesan for best melting. Let the dip rest for 2 minutes before serving to firm up slightly. For a crowd, double the recipe and bake in a 9×13-inch dish.
