  • 2 tablespoons fresh key lime juice (from about 34 key limes)
  • 1 cup (240 ml) full-fat canned coconut milk
  • 1 frozen banana, peeled and sliced
  • 1 tablespoon honey or maple syrup (adjust to taste)
  • 1/2 teaspoon vanilla extract
  • 1 cup (240 ml) ice cubes
  • Optional: Greek yogurt or plant-based yogurt for creaminess and protein
  • Optional: Fresh mint leaves for herbal note
  • Optional: Chia seeds for fiber and texture

Instructions

  1. Roll the key limes on the counter to loosen the juice, cut in half, and juice to get about 2 tablespoons. Remove any seeds.
  2. Gather 1 cup full-fat canned coconut milk, 1 frozen banana, 1 tablespoon honey or maple syrup, 1/2 teaspoon vanilla extract, and 1 cup ice cubes.
  3. Add coconut milk, frozen banana, key lime juice, honey, vanilla extract, and ice cubes to a high-speed blender. Blend on high until smooth and creamy. Add water or more coconut milk if too thick.
  4. Taste and adjust sweetness or thickness as needed. Blend briefly again to combine.
  5. If using Greek yogurt or chia seeds, add now and pulse a few times to incorporate without over-blending.
  6. Pour into chilled glasses and garnish with a lime wheel or fresh mint leaves. Serve immediately.

Notes

Use frozen banana for natural creaminess and thickness. Adjust sweetness gradually to balance tartness. Drink fresh for best texture as coconut milk can separate. For a colder smoothie, freeze banana slices overnight and use frozen key lime juice cubes.
