  • 1/2 cup finely chopped celery
  • 2 tablespoons finely diced red onion
  • 2 tablespoons sweet pickle relish (optional)
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Dice leftover ham into roughly 1/2-inch cubes.
  2. Finely chop celery and dice red onion; rinse onion under cold water if a milder flavor is desired.
  3. In a mixing bowl, combine mayonnaise, softened cream cheese, Dijon mustard, and fresh lemon juice. Stir until smooth and creamy.
  4. Stir in sweet pickle relish and chopped fresh parsley.
  5. Add diced ham, celery, and onion to the bowl. Gently fold everything together to coat without breaking down the ham chunks.
  6. Season with salt and freshly cracked black pepper to taste. Adjust lemon juice or relish if desired.
  7. Chill for 30 minutes if time allows to let flavors meld, or serve immediately.

Notes

If salad is too thick, stir in a splash of milk or buttermilk to loosen. Fold gently to avoid mashing ham and veggies. Chilling enhances flavor but is optional. Use quality ham for best taste.
