  • 1 pound (450g) cremini mushrooms, sliced ¼-inch thick
  • 2 tablespoons (30g) unsalted butter
  • 1 tablespoon (15ml) olive oil
  • 4 cloves garlic, minced
  • 1 cup (240ml) heavy cream
  • ½ cup (50g) freshly grated parmesan cheese
  • ¼ cup (60ml) reserved pasta water
  • ¼ teaspoon black pepper, freshly cracked
  • ¼ teaspoon red pepper flakes (optional)
  • Salt to taste
  • 2 tablespoons fresh parsley, chopped
  • Extra parmesan for garnish

Instructions

  1. Bring a large pot of salted water to a boil (about 1 tablespoon salt per 4 quarts water).
  2. Slice mushrooms into uniform ¼-inch slices. Wipe clean with a damp paper towel instead of rinsing.
  3. Heat butter and olive oil in a large skillet over medium-high heat until butter stops foaming and smells nutty. Add mushrooms in a single layer (do not overcrowd; cook in batches if needed).
  4. Let mushrooms sit undisturbed for 3-4 minutes to develop a golden crust. Toss and continue cooking for another 3-4 minutes until all mushrooms are golden and pan is almost dry.
  5. Reduce heat to medium-low. Add minced garlic and cook for 30 seconds, stirring constantly.
  6. Pour in heavy cream, stirring to combine and scraping up browned bits. Let come to a gentle simmer and cook for 2-3 minutes until slightly thickened.
  7. Meanwhile, cook pasta in boiling water according to package directions until al dente. Reserve 1 cup pasta water before draining.
  8. Add parmesan to cream sauce, stirring until completely melted and smooth. If too thick, add a splash of pasta water.
  9. Add drained pasta directly to skillet. Toss with tongs, adding ¼ cup reserved pasta water. Continue tossing until sauce coats every strand. Add more pasta water if needed for silky consistency.
  10. Season with black pepper and red pepper flakes (if using). Taste and add salt if needed.
  11. Serve immediately, twirling into bowls. Spoon remaining mushrooms and sauce over top. Garnish with fresh parsley and extra parmesan.
