A bright, tangy, and creamy smoothie bowl made with frozen bananas, coconut milk, and fresh lime juice. Topped with toasted coconut, berries, and chia seeds for a tropical breakfast that feels like a treat but is naturally sweet and healthy.

  • 1/2 cup full-fat coconut milk (canned)
  • Juice of 1 1/2 limes (about 3 tablespoons)
  • 1 tablespoon lime zest
  • 1/2 cup frozen cauliflower florets
  • 1 tablespoon maple syrup or agave (optional)
  • 1/4 cup unsweetened shredded coconut, toasted
  • 1 tablespoon chia seeds
  • 1/4 cup fresh berries (blueberries or raspberries)
  • 1 tablespoon coconut chips
  • Thin lime slices (for garnish)

Instructions

  1. Peel and slice bananas before freezing. Let frozen bananas sit at room temperature for 5 minutes to soften slightly.
  2. Zest and juice the limes. Zest first, then juice. Set zest aside.
  3. Toast shredded coconut in a dry skillet over medium heat for 2-3 minutes, stirring constantly, until golden and fragrant. Remove from pan immediately and let cool.
  4. Add frozen banana chunks, coconut milk, lime juice, frozen cauliflower, lime zest, and maple syrup (if using) to a blender. Start on low speed, then increase to high. Blend until thick, smooth, and fluffy, scraping down sides as needed. If too thick, add coconut milk 1 tablespoon at a time. If too thin, add more frozen banana or ice.
  5. Check consistency: the smoothie base should hold its shape when scooped, like soft serve ice cream.
  6. Pour the smoothie base into a shallow bowl. Use the back of a spoon to create swirls and dips.
  7. Top with toasted coconut, chia seeds, fresh berries, coconut chips, and lime slices. Serve immediately.

Notes

For a thicker bowl, use more frozen banana or cauliflower. For a thinner bowl, add more coconut milk. Fresh lime juice is essential; bottled juice will not provide the same bright flavor. Toasting coconut in a single layer prevents burning. Prep all toppings before blending to prevent the base from melting. Leftover base can be frozen for up to 2 weeks; thaw 10-15 minutes before serving.
