A quick and easy homemade comfort food featuring pillowy potato gnocchi in a rich, creamy sauce with crispy pancetta and fresh herbs, perfect for cozy dinners.

  • 1 pound (450 g) potato gnocchi (store-bought or homemade)
  • 4 ounces (115 g) pancetta, diced
  • 1 cup (240 ml) heavy cream
  • 1/2 cup (120 ml) chicken broth
  • 2 cloves garlic, minced
  • 1 small shallot, finely chopped
  • 1/2 cup (50 g) freshly grated Parmesan cheese
  • 2 tablespoons fresh herbs (parsley or chives), chopped
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste
  • Optional: pinch of crushed red pepper flakes
  • Optional: squeeze of lemon juice

Instructions

  1. Bring a large pot of salted water to a boil; add enough salt so the water tastes like the sea (about 10 minutes).
  2. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add diced pancetta and cook until crispy and golden, about 5-7 minutes. Use a slotted spoon to transfer pancetta to a paper towel-lined plate, leaving the rendered fat in the pan.
  3. In the same skillet with pancetta fat, add 2 tablespoons butter and reduce heat to medium-low. Stir in finely chopped shallot and cook until translucent, about 2 minutes. Add minced garlic and cook for another 30 seconds until fragrant, being careful not to burn the garlic.
  4. Drop gnocchi into the boiling water. They will float to the surface when done, usually 2-3 minutes. Use a slotted spoon to scoop them out and add directly to the skillet with shallot and garlic.
  5. Pour in the heavy cream and chicken broth. Stir gently to combine, scraping up any browned bits from the pan. Let the sauce simmer for 3-4 minutes until it thickens slightly and coats the back of a spoon.
  6. Stir in grated Parmesan cheese, reserved crispy pancetta, and chopped herbs. Season with salt and freshly ground black pepper to taste. If the sauce is too thick, add a splash more broth or cream. Add a squeeze of lemon juice right before serving for brightness.
  7. Serve immediately, garnished with extra herbs or Parmesan if desired.

Notes

If gnocchi stick together after boiling, toss gently with a little olive oil before adding to the sauce. Avoid overcooking gnocchi in the sauce to prevent mushiness. For dairy-free, substitute heavy cream with coconut cream and Parmesan with a dairy-free alternative. Pancetta can be replaced with bacon or omitted for vegetarian versions.
