  • 1 cup cooked shredded chicken
  • 1/2 cup buffalo hot sauce (Frank’s RedHot Original recommended)
  • 1/2 cup ranch dressing
  • 1/2 cup sour cream
  • 1 1/2 cups shredded sharp cheddar cheese, divided
  • 1/2 cup shredded Monterey Jack cheese
  • 1 tablespoon ranch seasoning mix
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon pickle juice
  • Salt and black pepper to taste
  • Celery sticks for serving
  • Carrot sticks for serving
  • Tortilla chips for serving
  • Pretzel bites for serving
  • Baguette slices for serving

Instructions

  1. Prep your cream cheese: Take the cream cheese out of the fridge about 30 minutes before you start. Cut it into cubes.
  2. Shred your chicken: If using rotisserie chicken, pull the meat off the bones and shred with two forks. You need about 1 cup.
  3. Layer everything in the slow cooker: Add cubed cream cheese, shredded chicken, hot sauce, ranch dressing, sour cream, 1 cup shredded cheddar, Monterey Jack, ranch seasoning, garlic powder, onion powder, and pickle juice. Do not stir yet.
  4. Cook on low for 2 hours. After 1 hour, stir well to break up cream cheese. Continue cooking for another hour.
  5. Stir again and check consistency. If too thick, stir in a splash of milk or additional hot sauce.
  6. Add remaining cheese: Sprinkle reserved 1/2 cup cheddar on top. Cover and cook for another 10-15 minutes until melted and bubbly.
  7. Season and serve: Add salt and pepper to taste. Serve straight from the slow cooker with dippers.

Notes

For creamiest texture, ensure cream cheese is at room temperature. Do not overcook on high heat to prevent dairy separation. Use a slow cooker liner for easy cleanup. Dip can be kept warm on the ‘warm’ setting for hours.
