Creamy White Wine Mushroom Chicken (Easy 30-Minute Recipe)

A quick and elegant one-pan chicken dish with tender chicken thighs, earthy mushrooms, and a velvety white wine cream sauce. Ready in 30 minutes, it’s perfect for busy weeknights or cozy dinners.

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 8 oz cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 small shallot, finely diced (about 1/4 cup)
  • 2 tablespoons unsalted butter
  • 1/2 cup dry white wine (Sauvignon Blanc or Pinot Grigio)
  • 1 cup heavy cream
  • 1/2 cup low-sodium chicken broth
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped
  • Cooked pasta, rice, or crusty bread for serving

Instructions

  1. Pat the chicken thighs dry with paper towels. Season both sides evenly with salt, pepper, and garlic powder. Let sit at room temperature for 10 minutes.
  2. Heat a large heavy-bottomed skillet over medium-high heat and add olive oil. Once shimmering, carefully place chicken thighs smooth side down. Cook for 4-5 minutes until deep golden brown, then flip and cook another 3-4 minutes. Transfer to a plate (chicken will not be fully cooked).
  3. Reduce heat to medium. Add butter to the skillet. Once melted, add shallots and sliced mushrooms. Cook for 5-6 minutes, stirring occasionally, until mushrooms are golden and liquid has evaporated.
  4. Stir in minced garlic and cook for 30 seconds until fragrant.
  5. Pour in white wine and scrape up browned bits from the pan. Let wine bubble and reduce by half, about 2 minutes.
  6. Add chicken broth, heavy cream, Dijon mustard, dried thyme, and red pepper flakes (if using). Stir to combine. Bring to a gentle simmer and cook for 2-3 minutes, stirring often, until sauce thickens slightly.
  7. Return chicken thighs to the skillet along with any accumulated juices. Spoon sauce over the tops. Reduce heat to medium-low, cover, and simmer for 8-10 minutes until chicken is cooked through (165°F internal temperature).
  8. Taste sauce and adjust salt and pepper if needed. Sprinkle with fresh parsley. Serve immediately over pasta, rice, or with crusty bread.

Pat chicken dry for best browning. Don’t overcrowd the pan when searing. Keep sauce at a gentle simmer to prevent cream from curdling. Deglaze the pan with wine to lift flavorful browned bits. Leftovers keep in the refrigerator for up to 3 days; reheat gently on the stovetop with a splash of broth or milk.
