These crispy, sticky, spicy, and slightly sweet cauliflower bites are a crowd-pleasing appetizer that comes together in about 35 minutes. With a double-breading technique for ultimate crunch and a creamy Bang Bang sauce, they are perfect for game day, parties, or a quick snack.

  • 1 cup all-purpose flour
  • 1 cup milk (dairy or unsweetened almond milk)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups panko breadcrumbs
  • Cooking spray or olive oil spray
  • 1/2 cup mayonnaise
  • 3 tablespoons sweet chili sauce
  • 1 tablespoon sriracha
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon garlic powder (for sauce)
  • 2 tablespoons chopped green onions (for garnish)
  • 1 tablespoon sesame seeds (for garnish)
  • Fresh cilantro leaves (optional, for garnish)

Instructions

  1. Preheat oven to 425ยฐF (220ยฐC). Line a baking sheet with parchment paper and place a wire rack on top if available.
  2. Wash and cut cauliflower into bite-sized florets (about 1 to 1.5 inches). Pat dry thoroughly with a clean towel or paper towels.
  3. In a medium bowl, whisk together flour, milk, 1 teaspoon garlic powder, onion powder, smoked paprika, salt, and black pepper until smooth and slightly thick (like pancake batter). Adjust with more milk or flour if needed.
  4. Place panko breadcrumbs in a separate shallow bowl.
  5. Dip each floret into the batter, letting excess drip off, then roll in panko, pressing gently to adhere. Place on the wire rack.
  6. Spray the coated florets generously with cooking spray.
  7. Bake for 20-25 minutes, flipping halfway through, until golden brown and tender. Alternatively, air fry at 375ยฐF (190ยฐC) for 12-15 minutes, shaking the basket halfway, in a single layer.
  8. While cauliflower bakes, make the sauce: whisk together mayonnaise, sweet chili sauce, sriracha, rice vinegar, and 1/2 teaspoon garlic powder in a small bowl. Adjust spice or sweetness to taste.
  9. Let cauliflower cool for 2 minutes, then place in a large bowl. Drizzle with about half the sauce and toss gently to coat.
  10. Transfer to a serving platter, drizzle with remaining sauce, and garnish with green onions, sesame seeds, and cilantro if desired. Serve immediately.

Notes

Dry cauliflower thoroughly to prevent batter from sliding off. Do not skip the spray oil for crispiness. Serve immediately for best crunch. Leftovers can be stored in an airtight container in the fridge for up to 2 days; reheat in oven or air fryer, not microwave.
