  • 2 teaspoons baking powder
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 1/4 cups milk (whole or 2%)
  • 2 large eggs, room temperature
  • 3 tablespoons unsalted butter, melted and slightly cooled
  • 1 large Granny Smith apple, peeled, cored, and finely diced
  • 3/4 cup granola (about 75 g), preferably crunchy mix with nuts and oats
  • 1 teaspoon vanilla extract
  • Optional: maple syrup or honey for serving
  • Optional: chopped walnuts or pecans for extra crunch

Instructions

  1. Peel, core, and finely dice one large Granny Smith apple. Set aside.
  2. In a large bowl, whisk together flour, baking powder, sugar, salt, and cinnamon.
  3. In a separate bowl, whisk milk, eggs, melted butter, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and stir gently until just combined; batter may be a little lumpy.
  5. Fold in diced apples and granola carefully. Add a splash more milk if batter is too thick.
  6. Preheat a non-stick skillet or cast iron pan over medium heat. Test readiness by sprinkling a few drops of water; they should evaporate immediately.
  7. Lightly butter or spray the skillet. Pour 1/4 cup batter per pancake onto skillet.
  8. Cook pancakes for 3-4 minutes until bubbles form on surface and edges look set.
  9. Flip pancakes carefully and cook for another 2-3 minutes until golden brown and cooked through.
  10. Serve warm with maple syrup or honey and extra granola or chopped nuts if desired.

Notes

Do not overmix the batter to avoid tough pancakes. Use room temperature eggs and milk for better mixing. Keep heat moderate to prevent burning granola. Flip pancakes only once when bubbles appear and edges set. Add extra granola on top before flipping for extra crunch. For gluten-free, use gluten-free flour and baking powder. For dairy-free, substitute butter with coconut oil and milk with plant-based alternatives.
