  • 2 large eggs, lightly beaten
  • Avocado oil (for frying)
  • 1/3 cup coconut aminos
  • 3 tablespoons raw honey (or date syrup for Whole30)
  • 2 tablespoons hot sauce (e.g., Frank’s RedHot)
  • 1 tablespoon tomato paste
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon arrowroot powder mixed with 2 tablespoons water (slurry)
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. Pat the chicken thighs dry with paper towels. Cut into bite-sized pieces, about 1-inch cubes. Season lightly with salt and pepper.
  2. Set up your dredging station: In one shallow bowl, beat the two eggs. In another, combine the 1/2 cup arrowroot powder, garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Whisk to combine.
  3. Dredge the chicken: Dip each piece first into the egg wash, letting excess drip off, then coat thoroughly in the arrowroot mixture. Press the coating on gently. Place coated pieces on a plate. For extra crunch, do a double dip (egg wash, arrowroot, egg wash, arrowroot).
  4. Heat about 1/4 inch of avocado oil in a large skillet over medium-high heat until shimmering but not smoking. Test with a pinch of arrowroot; it should sizzle immediately.
  5. Fry the chicken in a single layer without overcrowding (work in batches if needed). Cook for 3-4 minutes per side, until golden brown and cooked through (internal temp of 165°F). Transfer to a paper towel-lined plate to drain.
  6. While the chicken rests, carefully drain the oil from the pan, reserving about 1 tablespoon. Return the pan to medium heat. Add minced garlic and grated ginger, stirring constantly for about 30 seconds until fragrant.
  7. Pour in coconut aminos, honey, hot sauce, tomato paste, and rice vinegar. Whisk until smooth and bring to a simmer.
  8. Stir the arrowroot slurry and pour it into the simmering sauce. Whisk constantly until the sauce thickens and turns glossy and sticky, about 1 minute.
  9. Turn off the heat. Add the crispy chicken pieces to the pan with the sauce. Use tongs to gently toss until every piece is coated. Be careful not to over-toss.
  10. Transfer to a serving platter and top with sliced green onions and sesame seeds. Serve immediately.

Notes

For extra crunch, do a double dip in the egg wash and arrowroot. Keep oil temperature steady at medium-high heat. Work in batches to avoid overcrowding. Taste the sauce before tossing to adjust spice level. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days; reheat in a skillet for best texture.
