  • 1 ball of store-bought or homemade vegan pizza dough (about 12 inches / 30 cm)
  • ½ cup (120 ml) marinara or pizza sauce (no added sugar preferred)
  • 2 tbsp fresh rosemary, finely chopped
  • 2 tbsp fresh thyme leaves
  • ¼ cup fresh basil leaves, torn
  • 3 tbsp extra virgin olive oil
  • 2 cloves garlic, minced
  • ½ cup shredded vegan mozzarella or cashew cheese (optional)
  • Sliced cherry tomatoes, olives, or sautéed mushrooms (optional)
  • Salt and freshly cracked black pepper to taste

Instructions

  1. Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating for 30 minutes.
  2. In a small bowl, mix the extra virgin olive oil, minced garlic, chopped rosemary, and thyme. Let it sit for 5 minutes to infuse flavors.
  3. Roll out the pizza dough on a lightly floured surface into a 12-inch (30 cm) circle. Transfer to parchment paper.
  4. Brush the perimeter of the dough with about half of the herb oil mixture using a pastry brush.
  5. Spread the marinara sauce evenly over the dough, leaving a 1-inch (2.5 cm) border for the crust.
  6. Sprinkle vegan cheese evenly over the sauce, then add any additional toppings like cherry tomatoes or olives.
  7. Drizzle the remaining herb oil over the toppings.
  8. Slide the pizza with parchment onto the hot pizza stone or baking sheet and bake for 12-15 minutes, rotating halfway through.
  9. Check for doneness: crust should be golden and crispy, cheese melted, herbs toasted. Tent with foil if browning too fast.
  10. Let the pizza rest for 5 minutes on a cooling rack. Tear fresh basil leaves over the top before slicing and serving.

Notes

Use a pizza stone for extra crispy crust. If you don’t have one, a preheated baking sheet or cast-iron skillet works well. Fresh herbs are preferred over dried for best flavor. Watch bake time closely to avoid burning. For gluten-free, use almond or chickpea flour crust. Vegan cheese is optional; nutritional yeast can add cheesy flavor if omitted.
