  • ½ cup finely grated Parmesan cheese (50g)
  • 1 tablespoon extra virgin olive oil (15ml)
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder (optional)
  • ¼ teaspoon sea salt (or to taste)
  • ⅛ teaspoon black pepper, freshly ground
  • Optional: ¼ teaspoon red pepper flakes
  • Optional: ½ teaspoon smoked paprika
  • Optional: Lemon zest from ½ lemon

Instructions

  1. Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper.
  2. Wash and thoroughly dry the spinach leaves using a salad spinner or paper towels. Ensure leaves are completely dry.
  3. In a large mixing bowl, combine olive oil, garlic powder, onion powder, salt, and pepper. Whisk together.
  4. Add the dried spinach leaves to the bowl and gently toss with your hands until evenly coated with the seasoned oil.
  5. Arrange the spinach leaves in a single layer on the prepared baking sheet, ensuring they do not overlap.
  6. Sprinkle the grated Parmesan cheese evenly over the leaves.
  7. Bake for 5-7 minutes, then rotate the pan and bake for another 2-4 minutes, until edges are golden brown and cheese is bubbly. Total time: 7-10 minutes.
  8. Remove from oven and let chips cool on the baking sheet for 2-3 minutes.
  9. Transfer chips to a wire rack to cool completely before serving.

Dryness is crucial: any moisture will cause soggy chips. Do not overcrowd the pan. Watch the oven closely as chips can burn quickly. Let chips cool completely to maintain crispiness. Use freshly grated Parmesan for best results.
