These crispy oven-baked feta rolls feature a flaky, buttery phyllo crust with a tangy feta cheese filling, served with a sweet and bright honey dip. Perfect as an easy, crowd-pleasing snack or appetizer.

Ingredients

  • Phyllo dough sheets (thin and flaky, thawed if frozen)
  • Feta cheese (firm block-style, about 2 inches long and 1 inch thick sticks)
  • Unsalted butter (melted, or olive oil for dairy-free option)
  • Honey (raw or wildflower preferred)
  • Lemon juice (a splash for the honey dip)
  • Dried oregano or thyme (optional, for sprinkling inside rolls)
  • Freshly ground black pepper (to season feta)
  • Sesame seeds or nigella seeds (optional, for sprinkling on top before baking)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Carefully unroll the thawed phyllo dough and cover with a slightly damp kitchen towel to prevent drying.
  3. Stack two phyllo sheets at a time and cut into strips about 3 inches wide and 8 inches long. Keep remaining sheets covered.
  4. Slice the feta cheese into sticks about 2 inches long and 1 inch thick.
  5. Brush each phyllo strip lightly with melted butter using a pastry brush.
  6. Season each feta stick with freshly ground black pepper and optional dried herbs.
  7. Place a feta stick at one end of a phyllo strip and roll tightly like a cigar, tucking in edges to seal.
  8. Arrange the rolls seam-side down on the prepared baking sheet. Optionally sprinkle sesame or nigella seeds on top.
  9. Bake for 15-18 minutes until golden brown and crispy, watching closely near the end to avoid burning.
  10. While baking, whisk together honey and a splash of fresh lemon juice in a small bowl to make the dip.
  11. Remove rolls from oven and let cool a few minutes. Serve warm with the honey dip on the side.

Notes

Keep phyllo covered with a damp towel to prevent drying and tearing. Brush butter evenly but don’t oversaturate to avoid sogginess. Seal edges well to prevent cheese leakage. Check rolls near 14 minutes to avoid burning. Honey dip can be prepared ahead and refrigerated; bring to room temperature before serving. For gluten-free, substitute phyllo with gluten-free pastry sheets or rice paper. For vegan, use plant-based cheese and olive oil instead of butter.
