A quick and easy recipe for crispy, juicy chicken thighs cooked in a skillet and finished in the oven, perfect for cozy dinners.

  • 4 bone-in, skin-on chicken thighs (about 1.5 pounds / 700g)
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons olive oil or avocado oil
  • 2 tablespoons unsalted butter
  • 2 sprigs fresh thyme or rosemary (optional)
  • 3 cloves garlic, smashed
  • Half a lemon, sliced (optional)

Instructions

  1. Preheat the oven to 425°F (220°C). Set your skillet on the stove over medium-high heat to warm up while you prep.
  2. Pat the chicken thighs dry thoroughly with paper towels. Season generously on both sides with kosher salt and freshly cracked black pepper.
  3. Add the olive oil to the hot skillet and swirl to coat. Carefully place the chicken thighs skin-side down in the pan. You should hear a satisfying sizzle immediately.
  4. Sear the chicken for 6-8 minutes without moving it until the skin is deep golden brown and crispy.
  5. Flip the chicken thighs skin-side up using tongs, then add the butter, garlic, and fresh herbs to the skillet. Spoon melted butter over the chicken for extra flavor.
  6. Transfer the skillet to the preheated oven and roast uncovered for 15-20 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Remove from oven and let the chicken rest for 5 minutes before serving. If using, squeeze fresh lemon juice over the top.

Notes

Pat chicken skin dry before seasoning to ensure crispiness. Use a high smoke point oil for searing. Avoid overcrowding the skillet. If skillet is not oven-safe, transfer chicken to a baking sheet after searing. Monitor garlic cloves to prevent burning. Let chicken rest after roasting to lock in juices. For dairy-free, substitute butter with extra oil or plant-based alternative.
