  • 1 medium head of cauliflower (about 2 pounds), cut into small florets (about 4 cups)
  • 8 ounces cremini mushrooms, sliced about ¼-inch thick
  • 4 tablespoons unsalted butter
  • 5 to 6 cloves garlic, minced
  • 2 tablespoons olive oil
  • ½ teaspoon fine sea salt
  • ¼ teaspoon black pepper, freshly cracked
  • ¼ teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh lemon juice
  • ¼ cup grated Parmesan cheese (optional)
  • 2 tablespoons balsamic glaze (optional)
  • Fresh thyme or rosemary (optional)

Instructions

  1. Wash the cauliflower and pat it dry. Cut into small florets, about 1 to 1½ inches wide. Slice the mushrooms about ¼-inch thick. Mince the garlic and chop the parsley. Set aside.
  2. Place a large skillet over medium-high heat. Add 1 tablespoon olive oil and 1 tablespoon butter. Let the butter melt and start to foam.
  3. Add the sliced mushrooms in a single layer. Do not stir for 2 minutes. Then stir and cook for another 2 to 3 minutes until browned. Transfer to a plate.
  4. Add another tablespoon olive oil and another tablespoon butter to the same pan. Add the cauliflower florets in a single layer. Do not stir for 3 minutes. Then stir and cook for 4 to 5 minutes until tender and golden.
  5. Reduce heat to medium-low. Push cauliflower to one side, add remaining 2 tablespoons butter to the empty space. Add minced garlic, salt, black pepper, and red pepper flakes. Cook garlic for 30 seconds, stirring constantly. Stir everything together.
  6. Return the cooked mushrooms to the pan. Stir and cook for 1 to 2 minutes. Squeeze lemon juice over the top and stir. Adjust salt and pepper if needed. Remove from heat.
  7. Sprinkle fresh parsley over the top. Add Parmesan or balsamic glaze if desired. Serve immediately.

Notes

Pat vegetables dry for best browning. Do not overcrowd the pan. Let vegetables sit undisturbed to develop a golden crust. Add garlic after vegetables are mostly cooked and reduce heat to prevent burning.
