Easy Blueberry Brie Grilled Cheese: 15-Minute Lunch

A quick and delicious grilled cheese sandwich with creamy brie, sweet blueberries, and a hint of honey, all crisped to perfection in under 15 minutes. Perfect for a solo lunch or impromptu guest.

  • 4 slices sourdough bread
  • 4 ounces brie cheese, sliced into even pieces
  • 1 cup fresh blueberries
  • 2 tablespoons unsalted butter, softened
  • 1 tablespoon honey
  • Pinch of flaky sea salt (optional)

Instructions

  1. Prep the ingredients. Slice the brie into even pieces, about ¼-inch thick. Rinse and pat the blueberries dry if using fresh. If using frozen, thaw them first and blot away any excess moisture with a paper towel.
  2. Butter the bread. Lay the 4 slices of sourdough on a cutting board. Spread about ½ tablespoon of softened butter on one side of each slice. Flip them over so the buttered side faces down.
  3. Add the honey. Drizzle about ½ teaspoon of honey onto the unbuttered side of each slice. Spread it gently with the back of a spoon or your butter knife.
  4. Layer the brie. On two of the slices (the bottom halves), arrange the brie slices evenly. Don’t overlap them too much.
  5. Add the blueberries. Scatter about ¼ cup of blueberries over the brie on each bottom slice. Press them down gently so they nestle into the cheese. If you’re adding fresh herbs, sprinkle them over the berries now.
  6. Close the sandwich. Place the remaining two slices of bread on top, honey-side down, butter-side up. Press lightly to seal everything together.
  7. Heat the pan. Place your skillet over medium-low heat. Let it warm up for about 1 minute.
  8. Cook the first side. Carefully place both sandwiches in the pan. Cook for 3-4 minutes, or until the bottom is golden brown and crispy. Use your spatula to peek underneath—if it’s browning too fast, lower the heat.
  9. Flip carefully. Slide the spatula under one sandwich, lift it gently, and flip it in one smooth motion. Cook for another 3-4 minutes on the second side.
  10. Check for doneness. The bread should be deeply golden and crisp. The brie should be visibly melted and oozing slightly at the edges. If the bread is done but the cheese isn’t fully melted, cover the pan with a lid for the last minute of cooking.
  11. Rest and slice. Transfer the sandwiches to a cutting board and let them rest for 1-2 minutes. Use a serrated knife to slice diagonally.
  12. Finish with flaky salt. Sprinkle a tiny pinch of flaky sea salt over the cut edges. This is optional, but I promise it makes a difference.

Notes

Use room temperature brie for even melting. Pat berries dry to avoid sogginess. Cook on medium-low heat to prevent burning. Let sandwich rest before cutting to keep filling intact.
