  • 1 large ripe mango, peeled and diced into small cubes
  • ยฝ cup red bell pepper, diced small
  • ยผ cup red onion, finely diced
  • 1 jalapeรฑo, seeds and membranes removed, finely minced
  • ยผ cup fresh cilantro, chopped
  • Juice of 1 lime
  • Pinch of salt
  • ยฝ cup sour cream or Mexican crema
  • 2 tablespoons mayonnaise
  • Juice of ยฝ lime
  • 1 tablespoon chopped fresh cilantro
  • ยผ teaspoon garlic powder
  • Salt to taste
  • 2 cups cooked white rice (or cilantro lime rice, brown rice, or cauliflower rice)
  • 2 cups shredded romaine lettuce or cabbage slaw
  • 1 avocado, sliced
  • Crumbled cotija cheese or queso fresco (optional)
  • Lime wedges for serving

Instructions

  1. Preheat your oven to 425ยฐF (220ยฐC). Place a wire rack on a rimmed baking sheet and spray it lightly with oil.
  2. Make the mango salsa: In a medium bowl, combine the diced mango, red bell pepper, red onion, minced jalapeรฑo, and chopped cilantro. Squeeze in the lime juice, add a pinch of salt, and stir gently. Set aside.
  3. Prepare the lime crema: In a small bowl, whisk together the sour cream, mayonnaise, lime juice, chopped cilantro, garlic powder, and a pinch of salt. Taste and adjust. Refrigerate until ready to serve.
  4. Set up your breading station: In the first shallow bowl, combine the flour, garlic powder, smoked paprika, cumin, chili powder, salt, and pepper. In the second bowl, beat the two eggs. In the third bowl, place the panko breadcrumbs.
  5. Pat the fish chunks dry with paper towels. Season lightly with a pinch of salt and pepper.
  6. Coat the fish: Working with a few pieces at a time, dredge each chunk in the seasoned flour, shaking off excess. Dip into the beaten eggs, letting excess drip off. Press into the panko breadcrumbs, ensuring full coating. Place breaded fish on the prepared wire rack.
  7. Drizzle or spray the fish with a little olive oil or avocado oil.
  8. Bake for 12-15 minutes, flipping halfway through, until golden brown, crispy, and flaky (internal temperature of 145ยฐF/63ยฐC).
  9. While the fish bakes, assemble your bowls: Divide the cooked rice and shredded lettuce among serving bowls.
  10. Assemble and serve: Arrange crispy fish on top of lettuce and rice. Spoon mango salsa over the fish, add avocado slices, and drizzle with lime crema. Sprinkle with cotija cheese and serve with lime wedges.

Notes

Pat the fish super dry for maximum crispiness. Use panko breadcrumbs for a lighter, crunchier coating. Don’t overcrowd the baking sheet. For an air fryer version, cook at 400ยฐF (200ยฐC) for 8-10 minutes, flipping halfway. The mango salsa can be made up to 24 hours in advance.
