Instructions

  1. In a large bowl, combine 3 cups sliced peaches and 2 cups blueberries with 3/4 cup sugar, 1 tablespoon lemon juice, 1 teaspoon vanilla extract, 1 tablespoon cornstarch, and 1/2 teaspoon cinnamon. Toss gently until the fruit is evenly coated.
  2. Lightly grease the crockpot insert with butter or non-stick spray. Pour the fruit mixture evenly into the bottom.
  3. In a separate bowl, whisk together 1 cup flour, 1 teaspoon baking powder, 1/4 teaspoon salt, and 3 tablespoons sugar. Cut in 4 tablespoons cold, cubed butter using a fork or pastry cutter until the mixture resembles coarse crumbs. Stir in 1/3 cup milk and 1 teaspoon vanilla extract until just combined.
  4. Spoon dollops of the biscuit batter over the fruit. Gaps are fine; the batter will spread slightly as it cooks.
  5. Cover and cook on LOW for 3 to 4 hours. Avoid opening the lid during cooking.
  6. Let the cobbler rest for 10-15 minutes before serving. Serve warm with whipped cream or vanilla ice cream.
  7. Optional: If topping is too soft, broil in the oven for 2-3 minutes to add a golden crust.
