  • 1 tablespoon fresh ginger, grated
  • 1 small red bell pepper, finely diced
  • 3 stalks green onions, sliced
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon honey or maple syrup
  • ¼ teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Gently separate the lettuce leaves from the head, rinse under cold water, and pat dry with a clean towel. Set aside on a plate lined with paper towels to keep crisp (about 5 minutes).
  2. Mince the garlic and grate the ginger. Finely dice the red bell pepper and slice green onions thinly. Keep everything ready before heating the pan.
  3. Heat 1 teaspoon of sesame oil in a large skillet over medium-high heat. Add the ground turkey, breaking it up with a spatula. Cook for about 5-7 minutes until browned and no pink remains. Drain any excess liquid if necessary.
  4. Stir in the minced garlic, grated ginger, and diced red bell pepper. Cook for 2-3 minutes until fragrant and the peppers soften slightly.
  5. Pour in the soy sauce, rice vinegar, and honey (or maple syrup). Add crushed red pepper flakes if using, and season with salt and pepper to taste. Stir well and cook for another 2 minutes to let the flavors meld.
  6. Toss in sliced green onions, reserving a few for garnish. Give the mixture a final stir off heat.
  7. Spoon a generous amount of the turkey mixture into each lettuce leaf. Garnish with remaining green onions or toasted nuts if desired. Serve immediately.
