A quick and easy no-cook appetizer featuring fresh mozzarella, cherry tomatoes, and basil, drizzled with olive oil and balsamic glaze. Perfect for last-minute entertaining and summer gatherings.

Ingredients

  • Fresh mozzarella balls (bocconcini or ciliegine)
  • Cherry or grape tomatoes
  • Fresh basil leaves
  • Extra virgin olive oil
  • Balsamic glaze or reduction
  • Salt and freshly ground black pepper
  • Wooden toothpicks or small skewers
  • Optional: Small slices of prosciutto
  • Optional: Drizzle of pesto
  • Optional: Cracked red pepper flakes

Instructions

  1. Drain the mozzarella balls in a fine mesh strainer or on paper towels for about 5 minutes to remove excess liquid.
  2. Wash and dry the cherry or grape tomatoes thoroughly.
  3. Rinse and pat dry the basil leaves; use whole leaves or tear larger ones into bite-sized pieces.
  4. Thread one mozzarella ball, followed by a basil leaf (folded if large), and finish with a tomato onto each toothpick.
  5. Arrange the assembled bites on a serving platter.
  6. Lightly sprinkle with salt and freshly ground black pepper.
  7. Drizzle extra virgin olive oil evenly over the bites.
  8. Drizzle balsamic glaze over the bites just before serving.
  9. Optional: Add a pinch of red pepper flakes or small prosciutto slices wrapped around the mozzarella for extra flavor.

Notes

Keep the assembled bites chilled until serving. Drizzle balsamic glaze just before serving to prevent basil from wilting and bites from becoming soggy. For vegan adaptation, substitute fresh mozzarella with dairy-free cheese alternatives like cashew-based mozzarella or marinated tofu cubes. Optional add-ons include prosciutto, pesto, or red pepper flakes for flavor variations.
