  • 4 large ripe peaches, peeled, pitted, and sliced (about 4 cups)
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • Optional: 1/4 cup chopped pecans or walnuts
  • Optional: Pinch of nutmeg or ginger

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch baking pan or line it with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, combine rolled oats, all-purpose flour, light brown sugar, baking powder, salt, and ground cinnamon (if using). Stir gently to mix.
  3. Pour melted butter and vanilla extract into the dry ingredients. Stir with a wooden spoon until the mixture forms a crumbly dough that holds together when pressed but is loose enough to sprinkle.
  4. Press half of the oat mixture evenly into the bottom of the prepared pan to form a compact crust layer. Set the remaining crumble mixture aside for topping.
  5. In a medium bowl, toss sliced peaches with granulated sugar, cornstarch, lemon juice, and ground cinnamon until well coated.
  6. Spread the peach filling evenly over the oat base layer in the pan.
  7. Sprinkle the reserved crumble mixture over the peaches, breaking up any large clumps. Optionally, scatter chopped nuts on top.
  8. Bake in the preheated oven for 35–40 minutes, or until the topping is golden brown and the peach filling is bubbly around the edges. Check after 30 minutes to prevent over-browning and tent with foil if needed.
  9. Cool completely on a wire rack for at least 1 hour before slicing to let the filling set.
  10. Cut into squares or bars using a sharp knife dipped in hot water and wiped dry between slices for cleaner cuts.
