  • 4 ounces (113 grams) cream cheese, softened to room temperature
  • 1 tablespoon finely chopped fresh chives or parsley
  • Cracked black pepper, to taste
  • Pinch of garlic powder (optional)
  • 1 teaspoon olive oil or flavored oil (optional, for drizzling)
  • Toothpicks or small skewers for assembling
  • Optional extras: a few arugula leaves or thin cucumber slices for layering

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for about 10 minutes or microwave for 10 seconds until spreadable but not melted.
  2. In a small bowl, combine the softened cream cheese with chopped chives, a pinch of garlic powder, and cracked black pepper. Stir until evenly blended.
  3. Arrange the 12 salami slices flat on a cutting board or platter. Cut in half if desired for bite-sized portions.
  4. Spread about one tablespoon (15 grams) of the herb cream cheese onto each salami slice using a spoon or small offset spatula.
  5. If using, place a small arugula leaf or thin cucumber slice on top of the cream cheese.
  6. Gently roll each slice into a bite-sized cylinder or fold into a neat rectangle. Secure with a toothpick if needed.
  7. Lightly drizzle flavored olive oil over the bites for extra flavor, if desired.
  8. Arrange the bites on a serving tray and serve immediately or refrigerate for up to 2 hours before serving.

Notes

Softening the cream cheese is key to prevent tearing the salami slices. Pat cucumber slices dry to avoid sogginess if used. These bites can be refrigerated up to 2 days but are best fresh. Optional olive oil drizzle adds flavor and sheen. Variations include vegetarian versions using roasted eggplant or zucchini ribbons and swapping herbs seasonally.
