Instructions

  1. Preheat your oven to 425°F (220°C) and allow it to come to temperature for at least 15 minutes.
  2. Peel and cube the sweet potatoes into 1-inch pieces for even cooking.
  3. In a large mixing bowl, toss the sweet potato cubes with olive oil until lightly coated.
  4. Add sea salt, black pepper, smoked paprika, garlic powder, and herbs; toss again to evenly distribute spices.
  5. Arrange the sweet potatoes in a single layer on a large rimmed baking sheet, leaving space between pieces.
  6. Roast in the oven for 20 minutes.
