A quick and easy salmon recipe featuring a sweet and spicy pineapple glaze that caramelizes beautifully, perfect for effortless weeknight dinners.

  • 4 salmon fillets, skin-on, about 6 ounces (170g) each
  • 1 cup fresh pineapple, diced small (about 150g)
  • 2 tablespoons honey
  • 1/2 teaspoon red chili flakes (adjust to taste)
  • 1 tablespoon soy sauce (low sodium preferred)
  • 1 tablespoon fresh lime juice
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 tablespoons green onions, thinly sliced
  • Salt and pepper to taste

Instructions

  1. Pat the salmon fillets dry with paper towels and season both sides lightly with salt and pepper.
  2. In a small bowl, combine diced pineapple, honey, red chili flakes, soy sauce, lime juice, and minced garlic. Stir well and set aside for about 5 minutes.
  3. Heat a non-stick skillet or cast iron pan over medium-high heat and add olive oil. Heat until oil shimmers but does not smoke (2-3 minutes).
  4. Place salmon fillets skin-side down in the pan. Press gently with a spatula to keep skin flat. Cook for 4-5 minutes without moving.
  5. Flip the salmon and cook the other side for 3-4 minutes until opaque and flakes easily but remains moist.
  6. Reduce heat to medium-low and spoon the pineapple glaze over the salmon in the last 1-2 minutes, allowing it to bubble and caramelize without burning.
  7. Remove salmon from pan and let rest briefly. Garnish with sliced green onions before serving.

Notes

Keep pineapple chunks small for best texture. Avoid overcrowding the pan to ensure crispy skin. Watch the glaze carefully to prevent honey from burning. Let salmon rest briefly after cooking to retain juices. Adjust chili flakes to taste for desired heat level. For gluten-free, substitute soy sauce with tamari or coconut aminos.
