Instructions

  1. Toast the fennel seeds: Heat a dry skillet over medium heat. Add 1 tablespoon sweet fennel seeds and toast, stirring frequently for about 2-3 minutes until fragrant and slightly darker.
  2. Combine ingredients: In a medium bowl, add ground pork, toasted fennel seeds, minced garlic, onion powder, smoked paprika, black pepper, salt, and optional maple syrup or honey. Mix gently but thoroughly.
  3. Season and taste: Add a pinch of chili flakes if desired. Stir in fresh parsley.
  4. Preheat pan and cook: Heat olive oil in a skillet over medium-high heat. Add sausage mixture in small portions, breaking it up with a spatula or wooden spoon. Cook for 6-8 minutes, stirring occasionally, until browned and cooked through (internal temperature 160°F / 71°C).
  5. Drain excess fat: Transfer cooked sausage to a plate lined with paper towels to drain excess fat.
