Fresh Balsamic Strawberry Flatbread with Mozzarella

A quick and easy flatbread with sweet roasted strawberries, creamy mozzarella, and a tangy balsamic reduction. Perfect for a light dinner, appetizer, or brunch.

  • 2 pieces flatbread or naan (68 inches wide)
  • 1 cup fresh strawberries, sliced (¼-inch thick)
  • 8 ounces fresh mozzarella, sliced or torn
  • ½ cup balsamic vinegar
  • 1 tablespoon honey
  • ¼ cup fresh basil, torn
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Optional: Balsamic glaze for drizzling
  • Optional: ¼ teaspoon red pepper flakes

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Make the balsamic reduction: In a small saucepan, combine ½ cup balsamic vinegar and 1 tablespoon honey. Bring to a simmer over medium heat, then reduce heat to low. Let gently bubble for 8-10 minutes, stirring occasionally, until thickened and syrupy (coats the back of a spoon). Remove from heat and let cool.
  3. Line a baking sheet with parchment paper. Place flatbreads on the sheet and brush each lightly with olive oil, including edges.
  4. Wash and dry strawberries, then slice into even ¼-inch thick rounds. Pat dry with a paper towel to remove excess moisture.
  5. Tear fresh mozzarella into rough, bite-sized pieces.
  6. Assemble flatbreads: Arrange mozzarella pieces evenly over flatbreads, leaving a small border. Scatter sliced strawberries on top. Season with a pinch of salt and black pepper. Add red pepper flakes if using.
  7. Bake for 10-12 minutes, until flatbread edges are golden brown, cheese is melted and bubbly, and strawberries are softened and glossy. For extra color, broil for 1-2 minutes at the end, watching closely.
  8. Remove from oven and let rest on baking sheet for 2 minutes. Transfer to a cutting board, drizzle with balsamic reduction, and scatter torn fresh basil over the top. Add a final pinch of flaky sea salt if desired. Slice and serve warm.

Notes

Pat strawberries dry to prevent sogginess. Use room temperature mozzarella for even melting. For extra crispy crust, pre-bake flatbread for 3-4 minutes before adding toppings. Let flatbread rest 2 minutes before cutting to keep toppings in place.
