  • 2 tablespoons fresh herbs (parsley and mint, finely chopped)
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • 1 pinch salt
  • 1 pinch black pepper
  • 1/4 cup toasted nuts or seeds (optional, e.g., sliced almonds, chopped pecans, pumpkin seeds)

Instructions

  1. Wash and prep the berries: Rinse gently under cold water, pat dry thoroughly. Hull strawberries and slice in half (or quarters if large). Leave smaller berries whole. You should have about 4 cups total.
  2. Make the dressing: In a small bowl or jar, combine Greek yogurt, lemon juice, olive oil, honey, Dijon mustard, salt, and pepper. Whisk until smooth and creamy. If using a jar, shake vigorously for 20 seconds. Taste and adjust honey or lemon as needed.
  3. Add the fresh herbs: Stir in the chopped parsley and mint. Let the dressing sit for 1-2 minutes to meld flavors.
  4. Combine berries and dressing: Place berries in a large mixing bowl. Pour dressing over the top and toss gently with your hands or a large spoon until lightly coated. If adding nuts or seeds, sprinkle them in and toss once more.
  5. Let it rest (optional but recommended): Let the salad sit at room temperature for 5-10 minutes before serving to allow flavors to marry.
  6. Serve: Transfer to a serving bowl or individual plates. Garnish with extra herb leaves or flaky salt if desired. Serve immediately or within an hour.

Notes

Dry berries thoroughly to prevent dressing from sliding off. Start with two-thirds of the dressing and add more if needed. Use room-temperature yogurt for a smoother dressing. Keep dressing and berries separate if making ahead for a party. Leftover dressing keeps in the fridge for up to 3 days.
