Fresh Blueberry Vinaigrette Recipe: Best Easy Homemade Dressing

This quick and easy blueberry vinaigrette is made with fresh or frozen blueberries, olive oil, apple cider vinegar, and honey. It’s creamy, tangy, and perfect for salads, marinades, or dips.

  • 1 cup fresh or frozen blueberries (thawed if frozen)
  • 1/3 cup extra virgin olive oil
  • 3 tablespoons apple cider vinegar
  • 12 tablespoons honey
  • 1 teaspoon Dijon mustard
  • 1 small shallot, roughly chopped
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. If using fresh blueberries, rinse them and pick out any stems. If using frozen, let them thaw for about 10 minutes.
  2. Place the blueberries, olive oil, apple cider vinegar, honey, Dijon mustard, chopped shallot, salt, and pepper into a blender.
  3. Blend on low speed, gradually increasing to high, for 30-45 seconds until completely smooth and vibrant purple.
  4. Taste and adjust: add more salt, vinegar, or honey as needed. If too thick, add a tablespoon of water and blend again.
  5. Optional: strain through a fine-mesh strainer for a silky smooth dressing.
  6. Chill in the refrigerator for at least 15-20 minutes before serving. The flavors meld and the dressing thickens slightly.

Notes

Use room temperature ingredients for better emulsification. Start with less honey and adjust to taste. The dressing is better the next day. Can be used as a marinade for salmon or chicken, or as a dip for spring rolls.
