Instructions

  1. Wash the zucchinis thoroughly and trim off both ends. Using a spiralizer, create medium-thick zucchini noodles and transfer to a large bowl.
  2. Sprinkle about 1/2 teaspoon of salt evenly over the noodles. Toss gently and let sit for 5 minutes to draw out moisture.
  3. In a small bowl, whisk together olive oil, lemon juice, minced garlic, red pepper flakes (if using), and a pinch of black pepper.
  4. Place the salted noodles in a clean kitchen towel or paper towels and gently squeeze out excess moisture.
