Ingredients

Scale
  • 3 cups green cabbage, thinly sliced
  • 2 medium carrots, julienned or shredded
  • 1 small cucumber, thinly sliced or julienned
  • Handful fresh mint leaves
  • Handful fresh cilantro leaves
  • 2 green onions, thinly sliced
  • Cooked shrimp or chicken, chopped (optional)
  • 1/3 cup natural peanut butter
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon fresh lime juice
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon rice vinegar
  • 1 clove garlic, minced
  • 1/2 teaspoon fresh ginger, grated (optional)
  • 23 tablespoons water
  • Red pepper flakes or Sriracha (optional)

Instructions

  1. Prep the veggies: thinly slice green cabbage, julienne carrots, and slice cucumber into matchsticks or thin rounds. Chop mint, cilantro, and slice green onions. Toss all together in a large bowl.
  2. Cook protein if using: sauté shrimp in a little oil with salt and pepper until pink (3-4 minutes) or cook diced chicken until golden and cooked through (5-7 minutes). Let cool slightly and add to the veggie mix.
  3. Make the peanut sauce: combine peanut butter, soy sauce or tamari, lime juice, honey or maple syrup, rice vinegar, garlic, ginger, and water in a small bowl or jar. Stir or shake until creamy and pourable. Adjust heat with red pepper flakes or Sriracha if desired.
  4. Pour the peanut sauce over the salad and toss gently but thoroughly to coat all ingredients evenly. Taste and adjust seasoning with salt or extra lime juice if needed.
  5. Serve immediately or chill for up to an hour. If prepping ahead, keep sauce separate and toss just before serving to preserve crunch.
