Fresh Zesty Lemon Herb Tuna Salad

A bright, mayo-free tuna salad made with lemon, fresh herbs, capers, and olive oil. Ready in 20 minutes and perfect for a quick, healthy lunch.

Ingredients

  • 2 cans (5 oz each) canned tuna, drained (preferably oil-packed)
  • 1 large fresh lemon (zest and juice)
  • 1/4 cup fresh flat-leaf parsley, finely chopped
  • 2 tablespoons fresh dill, chopped
  • 1 small shallot, finely diced
  • 1 tablespoon capers, drained and roughly chopped
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. Finely dice the shallot and add it to a small bowl with the lemon juice. Let it sit for about 5 minutes while you chop the herbs.
  2. Zest the lemon before juicing it. Set aside about 1 teaspoon of zest with the chopped herbs.
  3. Drain the tuna well. If using oil-packed tuna, reserve 1 tablespoon of the oil for extra flavor if desired. Flake the tuna into a mixing bowl with a fork, keeping some texture.
  4. Make the dressing in the bowl with the tuna: add olive oil, Dijon mustard, the lemon-shallot mixture (including all the juice), and a pinch of salt and pepper. Stir gently with a fork until evenly coated. Taste and adjust seasoning.
  5. Add the chopped parsley, dill, lemon zest, and capers. Fold gently until herbs are distributed throughout.
  6. Cover the bowl and refrigerate for at least 15 minutes to let the flavors meld.
  7. Give it one last stir before serving. Taste again and adjust seasoning if needed.

Notes

Let the salad rest in the fridge for at least 15 minutes to allow flavors to meld. For best results, use oil-packed tuna and fresh herbs. If using water-packed tuna, add an extra drizzle of olive oil. Drain capers well to avoid excess saltiness.
