Garlic Butter Steak Bites

Tender, juicy steak bites seared to perfection and tossed in a rich garlic butter sauce, perfect for a quick and comforting dinner.

  • 1 pound sirloin or ribeye steak, cut into 1-inch cubes
  • 3 tablespoons unsalted butter, softened
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper, to taste
  • Optional: red pepper flakes
  • Optional: fresh lemon juice

Instructions

  1. Pat the steak cubes dry with paper towels to remove excess moisture and season generously with salt and pepper.
  2. Heat a large heavy-bottom skillet or cast-iron pan over medium-high heat and add olive oil. Wait until it shimmers but does not smoke.
  3. Add steak cubes in a single layer without overcrowding the pan. Cook for 2-3 minutes without moving, then flip and sear the other side for 2 minutes until deeply browned and medium-rare to medium. Remove steak from pan and set aside.
  4. Lower heat to medium, add butter and minced garlic to the pan. Stir constantly for 1-2 minutes until garlic is fragrant but not burnt.
  5. Return steak bites to the pan and toss in the garlic butter to coat evenly. Sprinkle chopped parsley over the top and stir gently for 1 minute. Add a squeeze of fresh lemon juice if desired. Serve immediately.

Notes

Avoid overcrowding the pan to ensure a good sear and crispy crust. Pat steak dry before cooking to remove moisture. Stir garlic butter constantly and keep heat moderate to prevent burnt garlic. Let steak rest briefly if cooking in batches. For dairy-free, substitute butter with coconut oil or vegan butter.
