Healthy Cozy Almond Croissant Baked Oats – Easy Breakfast

Warm, nutty, and just sweet enough, these baked oats taste like an almond croissant but are made with simple, nourishing ingredients. Ready in under 20 minutes, it’s the perfect cozy breakfast for busy mornings.

  • 1/2 cup (45g) rolled oats
  • 1 medium ripe banana (about 100g)
  • 1/3 cup (80ml) unsweetened almond milk
  • 2 tablespoons (30g) natural almond butter
  • 2 tablespoons (15g) almond flour
  • 1 large egg
  • 1 tablespoon (15ml) maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/2 teaspoon baking powder
  • 1 pinch salt
  • 1 tablespoon sliced almonds (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) or air fryer to 325°F (160°C). Lightly grease a 10-ounce ramekin or small baking dish with coconut oil or non-stick spray.
  2. Add rolled oats, almond flour, baking powder, and salt to a blender. Pulse a few times until the oats are broken down into a coarse flour (about 10 seconds). Do not over-blend.
  3. Add the banana chunks, almond milk, almond butter, egg, maple syrup, vanilla extract, and almond extract to the blender. Blend on low until smooth and well combined. The batter should be thick but pourable; if too thick, add another tablespoon of almond milk.
  4. Pour the batter into the prepared ramekin, filling it about 3/4 full. Smooth the top with a spatula and sprinkle sliced almonds evenly over the surface, pressing them in gently.
  5. Bake in the oven for 18-22 minutes, or in the air fryer at 325°F (160°C) for 14-16 minutes, until the top is golden brown and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  6. Let it cool in the ramekin for 2-3 minutes before serving. The texture will be soft and custard-like inside.

Notes

For a sweeter, caramelized top, drizzle a little maple syrup over the almonds before baking. Let the baked oats rest for 2-3 minutes after baking to set the texture. This recipe can be easily doubled for two servings.
