These Magical Sweet & Spicy Dragon Roasted Nuts are an easy, addictive snack featuring a sticky-sweet gochujang glaze with a slow-building heat. Ready in under 30 minutes, they’re perfect for parties, hiking, or anytime you crave a crunchy, flavorful treat.

Ingredients

Scale
  • 1 cup raw cashews (about 140g)
  • 1 cup raw almonds (about 140g)
  • 2 tablespoons gochujang paste
  • 3 tablespoons honey
  • 1 tablespoon coconut oil, melted
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • ½ teaspoon cinnamon
  • ½ teaspoon garlic powder
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 325°F (163°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, whisk together gochujang, honey, melted coconut oil, soy sauce, rice vinegar, cinnamon, garlic powder, and salt until smooth.
  3. Add the cashews and almonds to the bowl. Stir with a spatula until every nut is evenly coated.
  4. Spread the nuts in a single layer on the prepared baking sheet, keeping them from touching too much.
  5. Roast for 15 minutes, stirring at the 7-minute mark to ensure even coating and prevent burning.
  6. Check at 15 minutes; the nuts should be deep golden brown and fragrant. If pale, roast for 2-3 more minutes.
  7. Cool completely on the baking sheet for at least 20 minutes without touching. The nuts will crisp up as they cool.
  8. Once fully cool, break apart any clusters with your fingers.

Notes

For extra crispy nuts, after roasting, turn off the oven and leave the nuts inside with the door slightly open for 5 minutes. Do not skip the stir at 7 minutes to prevent burning. Let nuts cool completely before storing to maintain crunch. For a vegan version, swap honey for maple syrup or agave nectar. Use tamari or coconut aminos for gluten-free.
