  • 2 large eggs, room temperature

  • 1/2 cup small-curd cottage cheese, well-drained
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup chopped walnuts or chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or non-stick spray and set aside.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
  3. In a large bowl, mash the ripe bananas with a fork until mostly smooth but with some chunks for texture.
  4. Stir in the peanut butter and brown sugar to the mashed bananas until thick and sticky.
  5. Beat in the eggs and melted butter to loosen the batter and add richness.
  6. Gently fold in the cottage cheese and vanilla extract.
  7. Gradually add the dry ingredients to the wet mixture, folding gently with a spatula. Stop mixing as soon as the flour disappears to keep the bread tender.
  8. If desired, fold in chopped walnuts or chocolate chips.
  9. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  10. Bake for 55-65 minutes, checking doneness by inserting a toothpick in the center; it should come out clean or with a few moist crumbs.
  11. Let the bread rest in the pan for 10 minutes, then transfer to a cooling rack to cool completely before slicing.

Use very ripe bananas for best flavor. Do not overmix the batter to keep the bread tender. Let bread cool completely before slicing to avoid crumbling. For a more pronounced peanut butter flavor, swirl extra peanut butter on top before baking. Tent with foil after 40 minutes if browning too quickly. Cottage cheese can be substituted with Greek yogurt or ricotta cheese for moisture.
