  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (115g), softened
  • 2 large eggs, room temperature
  • 1/2 cup sour cream (120ml)
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan with butter or nonstick spray and set aside.
  2. Peel and dice the peaches into roughly 1/2-inch pieces. If very juicy, gently pat dry with paper towels to reduce moisture.
  3. In a large bowl, beat the softened butter with granulated sugar and brown sugar until light and fluffy, about 3-4 minutes.
  4. Add eggs one at a time, beating well after each addition.
  5. Stir in sour cream and vanilla extract until smooth.
  6. In a separate bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon (if using).
  7. Gradually fold the dry ingredients into the wet ingredients, mixing gently just until combined.
  8. Gently fold in the diced peaches using a rubber spatula, keeping the batter light and airy.
  9. Pour the batter evenly into the prepared pan and smooth the top.
  10. Bake for 40-45 minutes until golden brown and a toothpick inserted in the center comes out with a few moist crumbs.
