Perfect Buffalo Chicken Dip for Game Day

This creamy, tangy buffalo chicken dip has just the right amount of heat that builds slowly. It’s the perfect game day appetizer that will have everyone coming back for more.

  • 2 cups cooked, shredded chicken (about 2 large chicken breasts or 1 rotisserie chicken)
  • 8 oz cream cheese, softened
  • 1/2 cup ranch dressing
  • 1/2 cup buffalo hot sauce (e.g., Frank’s RedHot)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon buttermilk
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste
  • Tortilla chips, celery sticks, carrot sticks, or pretzel bites for serving
  • Optional garnish: chopped green onions, crumbled blue cheese, or extra hot sauce

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Shred the chicken using two forks until you have bite-sized pieces. You should have about 2 cups.
  3. Soften the cream cheese by letting it sit at room temperature for 20-30 minutes or microwaving for 15-20 seconds.
  4. In a mixing bowl, combine softened cream cheese, ranch dressing, buffalo hot sauce, melted butter, buttermilk, garlic powder, and onion powder. Mix with a hand mixer or spatula until smooth.
  5. Fold in the shredded chicken, 3/4 cup of cheddar, and 1/4 cup of Monterey Jack cheese until evenly distributed.
  6. Transfer the mixture to the prepared baking dish and spread into an even layer. Sprinkle the remaining 1/4 cup cheddar and 1/4 cup Monterey Jack cheese on top.
  7. Bake for 20-25 minutes until hot and bubbly. For a browner top, broil for 1-2 minutes.
  8. Let the dip rest for 5 minutes before serving. Garnish with green onions and blue cheese if desired. Serve warm with chips, celery, carrots, or pretzels.

Notes

For a smoother texture, use room temperature ingredients. Shred your own cheese for best melting. Let the dip rest for 5 minutes after baking to set. For a slow cooker method, combine all ingredients (except garnish) in a slow cooker, cook on low for 2 hours, add reserved cheese in last 15 minutes, then switch to warm.
