Instructions

  1. Soften the butter at room temperature (about 30 minutes ahead). Finely chop fresh mint leaves and zest the limes carefully, avoiding the white pith.
  2. In a large bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Using a stand or hand mixer, beat the softened butter with granulated sugar on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in the egg, vanilla extract, and rum extract (if using) until fully combined.
  5. Stir in the fresh lime zest and finely chopped mint leaves.
  6. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Do not overmix.
