  • 1 medium Granny Smith apple, peeled, cored, and finely chopped

  • ½ small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon (15ml) olive oil
  • Salt and pepper to taste
  • 4 soft sandwich buns or rolls (brioche buns recommended)
  • Optional toppings: sliced pickles, coleslaw, fresh arugula

Instructions

  1. Place the chicken breasts in a medium saucepan and cover with water. Add a pinch of salt and bring to a gentle boil over medium heat. Simmer for about 15–18 minutes or until the chicken is cooked through and no longer pink inside. Remove the chicken from the water and let it cool slightly.
  2. Using two forks, shred the chicken into bite-sized pieces. Set aside.
  3. Heat olive oil in a skillet over medium heat. Add the diced onion and cook for about 3 minutes until translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
  4. Add the chopped apple to the skillet and cook for 2–3 minutes until the apple softens slightly but still retains some crunch.
  5. Stir the shredded chicken into the skillet with the onion, garlic, and apple mixture.
  6. Pour in the BBQ sauce and apple cider vinegar. Stir well to coat the chicken evenly. Let the mixture simmer on low heat for 5–7 minutes, stirring occasionally until the sauce thickens slightly.
  7. Season with salt and pepper to taste. Adjust tanginess or sweetness by adding more vinegar or a drizzle of honey if desired.
  8. Lightly toast the sandwich buns in a skillet or oven until warm and slightly crisp.
  9. Assemble the sandwiches by piling the pulled chicken mixture onto the bottom half of each bun. Add optional toppings like pickles, coleslaw, or arugula, then top with the bun.
  10. Serve immediately while warm.

Notes

If sauce thickens too much, add a teaspoon of water or chicken broth to loosen. For tart apples, add a pinch of brown sugar or honey to balance flavors. Avoid overloading sandwiches with toppings to prevent sogginess. Prepare pulled chicken a day ahead for deeper flavor. Poaching chicken in broth adds extra flavor. Moderate heat when sautéing apples keeps some crunch.
