These hot Italian sub sliders are a quick, easy, and crowd-pleasing game day snack featuring layers of Italian deli meats, provolone cheese, and tangy giardiniera baked to melty perfection.

  • 12 slider buns (soft dinner rolls or small sub buns, preferably King’s Hawaiian rolls)
  • 6 oz sliced Genoa salami
  • 6 oz sliced pepperoni
  • 6 oz thin sliced ham or capicola
  • 12 slices provolone cheese
  • 1/2 cup (120 ml) chopped giardiniera
  • 1/2 cup (115 g) unsalted butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon yellow mustard
  • 2 tablespoons mayonnaise (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Slice the slider buns horizontally, but don’t separate the top and bottom halves completely.
  3. Arrange the bottom halves of the buns in a 9×13-inch baking dish in a single layer. Trim extra buns to fit if needed.
  4. Layer the Italian deli meats evenly over the bottom buns: start with Genoa salami, then pepperoni, and top with ham or capicola.
  5. Chop the giardiniera and evenly distribute it over the meat layer.
  6. Place a slice of provolone cheese over the giardiniera-covered meat.
  7. Cover the assembled sliders with the top halves of the buns.
  8. In a small bowl, mix the melted butter with garlic powder, dried oregano, and red pepper flakes (if using). Stir well.
  9. Brush the butter mixture generously over the tops of the slider buns.
  10. Cover the baking dish tightly with aluminum foil.
  11. Bake for 15-20 minutes, until the cheese is melted and the tops of the buns are slightly toasted.
  12. Remove the foil and bake for an additional 3-5 minutes if you want a crispier top. Watch carefully to avoid drying out.
  13. Let the sliders rest for 5 minutes before slicing through the buns and serving.

Notes

For extra moisture, spread a thin layer of mayonnaise or yellow mustard on the buns before layering the meat. Chop giardiniera finely to avoid overwhelming bites. You can assemble sliders ahead and refrigerate; bring to room temperature before baking. For a crispier top, remove foil for last 3-5 minutes of baking. Sliders freeze well before baking; add 10 minutes to baking time when baking from frozen.
